This creamy dessert is a new take on tiramisu. Instead of using coffee, I used chai flavours. It’s super quick and easy to make (took me less than 30 mins to make). I used a basic tiramisu recipe but replaced the coffee with tea and added chai latte powder to the cream mixture.
Ingredients
- 1 tub of Drink Me chai powder
- 2 packets of sponge fingers (or enough to make two layers in your dish)
- 2 cups strong tea- I used 6 teabags
- 4 tsp of sugar
- 2 tsp cardamom powder
- 2 tsp cinnamon powder
- 500 g of mascarpone cheese
- 900 ml double cream (that’s roughly 1 1/2 pots of the large double cream pots which are usually 600ml)
- 1 tsp caster sugar and 1 tsp cinnamon for the topping
Method
- In a mixing bowl, add the mascarpone cheese, cream and a tub of Drink Me chai powder and mix with an electric whisk until thick
- In a shallow bowl, add the strong tea and mix in the cardamom and cinnamon powder and sugar
- Dip the sponge fingers into the tea but don’t soak it completely otherwise it may disintegrate
- Place the sponge fingers in a dish covering the surface to create the first layer
- Spread the mascarpone and cream mixture on top of the sponge finger layer to create the second layer
- Repeat steps 4 and 5 to create two layers of sponge fingers and two layers of cream
- Using a sieve, dust the cinnamon and sugar mixture on top
