Aloo tikkis are a street food classic. Aloo means potato in urdu/hindi and it’s a perfect afternoon snack, made up of mashed potatoes, a couple of spices and coriander. I added a block of cheese in mine to make it more exciting!
Ingredients:
- 2 large potatoes peeled and boiled
- Half a large onion- finely chopped
- 2 tsp cumin seeds
- 1 tsp red chilli flakes
- Handful chopped coriander
- 1 medium egg- whipped
- Salt to taste
- Cornflour (to coat)
- Cheddar cheese or mozzarella
- Oil for frying
Method:
- Mash the potatoes in a bowl
- Add the onion, cumin, chilli flakes, salt and coriander to the potatoes and mix well
- Add the whipped egg to help bind the potato tikki
- Using your hands, create a patty shape with the potato mixture
- Add your cheese in the the middle of your patty and make a ball with the mixture to cover the cheese, then flatten this ball to make a patty again
- Coat the patty with cornflour
- In a small frying pan, pour enough vegetable oil to shallow fry the aloo tikki
- Fry the tikki on medium heat until golden colour on both sides
